Recipe: PIMM'S CUP
Welcome to Summer!
I don't know about you, but I'm getting tired of my usual gin & tonic. Need a new drink for summer? Let's take a jump across the pond for inspiration. How about a Pimm's Cup?
Pimm's No. 1 is a gin-based liqueur originally created in London as a health tonic. I mean, come on, weren't all drinks considered health tonics in the 1800s? While, it's the official drink of Wimbledon, there's also a huge history of Pimm's in New Orleans. Here's my take on it.
Oh, and if don't drink or would prefer not to, I highly recommend using tart cherry juice to replace the Pimm's. Does it taste the same. Well, no. But it's equally refreshing!
PIMM'S CUP
Makes 4 servings
INGREDIENTS
1 cup Pimm's No. 1 (or Tart Cherry Juice)
2 bottles of Ginger beer
8 Strawberries
1/2 English (Seedless) Cucumber
1 Lemon, all sliced thin
Mint springs
INSTRUCTIONS
Ice the glasses, add a few slices of strawberry, cucumber & lemon to each one. Add 2 oz. of Pimm's No. 1 or juice. Top with ginger beer and garnish with fresh mint.
